Sat, 31 Mar 2012 18:48:55 +0000http://http://www.nomadis.cz/rozinkyamandle/?p=592#comment-25971: Já se s ní seznámil v italské restauraci kde jsme ji připravovali a byla super, jen tomu člověk musel přijít na chuť :-) Ono to není ani tak o lásce na první sousto, jde spíš o příběh ne nepodobný tomu jak se u nís začali jíst brambory.V dobách kdy bylo v jižní Evropě opravdu zle a lidé trpěli hlady, právě solená a sušená treska byla potravinou které mnohým zachránila zdraví, neřkuli život. Dodnes se pořádají festivali věnované této komoditě. Jeden druh tresky jsme vymáčeli a pomalu pekli, podávala se studená na jednoduchém bramborovém salátu s kapary a petrželkou, ale taky nám dorazila bacalao která vypadala jak hadr na podlahu a voněla podobně. :-) Takže to asi nebude o bacalao samotné, ale třeba o zdroji a hlavně potom o kuchaři který se ujme její přípravy. Další takovou delikatesou je například bottarga – solené nebo uzené jikry. Je to lahůdka ale nevím jak by se na to tvářil našinec který by si do ní například kousl, tak jak je. :-D

A v klasické pastelarii, kde připravují jen ryby a klasiku portugalska a jako bacalhau mi na chuť nepřišla je to suché a slané a plné kostí. Za to, ale sardinky připravované ve velkém množství stánků ve městě dostanete jen tak opečené, ogrilované do kornoutu třeba u pláže..stojí za to jsou výtečné. Tak stejně jako chobotnice, kterým jsem naprosto propadla, ale ta Bacalhau no až tam pojedu znova dám ji ještě jednu příležitost, ale nic moc….žádná láska na první sousto
