navstivil jdem Vas blog (byl jsem nejakou dobu mimo, vydelavat na zivobyti, bylo dulezitejsi nez kecat o nem) a mohu rici, ze ho miluji, i kdyz je teprve v zacatcich. U cuketku je to tak trochu profesionalne snoby, tady je ta prava parketa pro nas part time kuchare. Diky a vydrzte.

Zažil jsem kolegy kteří mluvili o nevyzpytatelnosti kynutého těsta v závislosti na mouce a droždí, ale tomu váhu nepřikládám. Myslím že i s průměrnou moukou dosáhnete poctivým zpracováním uspokojivých výsledků. Jediné na co si při pečení dávám pozor jsou žitná a ječná mouka. U pšeničné hladké prostě důkladně propracuji těsto a dám mu potřebný čas. Lepek potom vykoná své. Bližší info vám jistě poskytne Alex, Jednorožec a Dman na Cuketkovi :-))

Taky se mi to stávalo, ale při uvedeném postupu nemám problém.Placku o něco silnější a minimálně 20 minut nechat odpočinout před pečením. Při teplotě kolem 240ˇstupňů se začne nafukovat během chvilky.

Na řeckém ostrově Thassos jsem v jedné gyrosárně dostala takovou žluťoučkou pitu, asi dělanou z kukuřičné mouky. Hlavně ale byla úžasně vláčná a poddajná. Můžete poradit, jak toho dosáhnout?
